Wiang Sa district is a great plain land with a rich agriculture, nature and culture. The local people earn their living by growing crops. There are a lot different kinds of homemade food that we can find easily in our hometown. Northern people usually eat sticky-rice as the main dish. Local food consists not only of healthy nutrition and herbs. Moreover, we can save money by eating our local and homemade food. The two most popular dishes are Kaeng Khae Kai and Lab Pla (Spicy minced fish Salad)

Kaeng Khae Kai (Chicken)

For 3-5 persons
Ingredients for chili paste (Curry Paste)

  • 1 teaspoon salt

  • 10 garlic cloves

  • 1 teaspoon turmeric

  • 2 tablespoons

  • sliced lemon grass

  • 1 teaspoon makwan

  • ½ tbsp sliced kaffir lime rind

  • 10 small dried chilies

  • 1 tsp coriander root

  • 5 shallots

  • 1 tsp shrimp paste

  • 1 tsp fermented Fish

• Put all mixture ingredients above in a mortar and pound until ground and mixed thoroughly.

Other Ingredients:

  • 300 – 400 grams of chicken (other meat isn’t needed)

  • 300 ml. coconut milk

  • vegetables (egg plants (small, big), khae flowers, cha-ohm, chili leaves, ped leaves, string beans etc.)

Preparation nd how to cook

  1. wash and cut the chicken into proper pieces

  2. prepare the vegetable mixture by cutting the vegetables into pieces

  3. separate the egg plants and string beans from the other vegetables

  4. heat the stove, put a cup of coconut milk into a pot

  5. when the coconut milk boils, add the chili paste and stir thoroughly for a short time

  6. add the chicken to the chili paste, fry it and then add the rest of the coconut milk (or some water) and cook the food for about 10 more minutes (make sure that the chicken is well done

  7. add the “hard” vegetables (egg plants and string beans) and cook them for 5 minutes

  8. then add the rest of the vegetables; boil them for a short time

  9. remove the pot from the heat and taste and flavor the meal by adding pounded garlic and makwan


  • Pork or beef can be used instead of chicken.

  • Serve it with omelet (ไข่เจียว) and hot sticky rice; it’s such a wonderful recipe!
